With the return of Mega Evolution in Let's Go Pikachu and Eevee, what are your thoughts on these graphics? Also, do you wish to see more added in future or is it a bad move?

Tricky question.
Yes and no. I want to see more Gen 4 to 7 Mega Evos but it's not going to happen in a "spinoff" title, even less if we consider it didn't happen last gen (maybe because of Alolan Forms).

I absolutely love the graphics compared to their previous apparitions in the 3DS games. They feel a lot more vibrant this way, and I'm glad they got rid of the toon outline shader (I know the lines were there to help seeing the small sprites, but on a bigger screen they didn't appear to look so good). I can't wait to see how Mega Gengar and Mega Pidgeot look in HD!
I would be okay with seeing more megas in the future. It would be nice if underated pokemon were to have megas in priority over more used pokemon!

I am in joy with the look of the Megas in these games, since the Pokémon already have a more colorful tone (like it used to be in the pixel-sprite era). I hope they take this opportunity to add some more Gen 1 Megas (unlikely, but who knows).
